UFCW — United Food and Commercial Workers: the primary grocery union in many chain stores and some independents. A collective bargaining agreement can dictate successor obligations, wages, and whether a new owner must bargain — none of those dollar scales are invented here.
Do not assume an independent is non-union; read the employee handbook and ask. Do not invent a wage scale here.
Operators, lenders, and buyers do not use this word the way a generic small-business blog uses it. On an independent grocery file it shows up in the recast, the count, or the license calendar.

If UFCW changes cash at close, write the mechanic into the LOI. If it is only vocabulary, put it in a footnote and move on.
