Open last year’s P&L and mark the SDE worksheet. A grocery store owner’s living is recast SDE — the cash one owner-operator can take after you restore owner pay, pull personal costs that leave with the seller, and leave the store in the number. It is not the W-2 line. It is not a national salary table. This pack does not invent an owner-income average. Book a confidential intro with the recast when you want a living number on this box.

Grocery Store Business Broker — HedgeStone Business Advisors, led by Jason Taken — answers owner income from the file. Anatomy of a grocery P&L is the department read. What SDE is is the definition. This page is the living.

The living is SDE, not a W-2

Many owners take a small salary and the rest as draws, related-party rent, a personal auto, and groceries walked out the back. The return can look thin while the household is living. Recast those lines and you have SDE. The reverse is also true: a pretty W-2 that depends on unpaid family hours is not a living a buyer can keep. How to recast a grocery P&L is the sequence. How add-backs are treated is the line-item fight.

Evaluating a store’s P&L keeps department gross margin from hiding a meat-case problem inside a storewide blend. Meat and produce can sink a week that “looks busy” at the front end. Scan data and tender mix tell you whether the living is real. Unreported cash is not a living you can sell. It does not survive SBA 7(a) — published maximum $5 million for a change of ownership that still has to underwrite on documented cash — and it does not survive a serious conventional buyer.

FMI’s 2.1 percent average net profit for food retailers in 2025 is a food-retailer net sample. It is not an owner salary. SDE sits above that net because it puts the owner’s living back into cash. A store can clear a livable SDE on a thin net if sales are large enough and occupancy is honest. A store can also print a thin SDE on a busy week if rent and labor ate the ring. What is a good profit margin is the net question. This page is the household question.

Thin food-retailer net and a livable week

Grocery is a high-turn, low-net trade. FMI reports $1 trillion in 2025 supermarket sales and 45,575 U.S. supermarkets in 2024. That is why the industry is real. The 2.1 percent net sample is why the living is not a tech salary. FMI’s $668,377 average weekly sales per supermarket in 2025 describes Speaks supermarkets. Your independent week is allowed to be smaller. Do not assume a channel weekly is your take-home.

Occupancy decides more living than a slogan about “volume.” Related-party rent that sat below market juiced the seller’s household and will reverse on a buyer. Run the rent-as-percent-of-sales checker. Lease diligence is where CAM true-ups show up. A CAM bill can erase a year of “extra” living you thought you had.

Shrink is the other silent tax on the household. Recurring waste is not an add-back. It is cash that never made it home. Shrink, margin, and turns is the operating read.

Hours you work versus hours you must hire

SDE assumes one owner-operator in the box. If you work seventy hours, that living includes your unpaid weeks. A buyer — or a tired seller who wants out of the cut room — who hires a closer, a cutter, and a produce lead must subtract those wages. What remains is the living after you stop sleeping in the store. SDE versus EBITDA is that fork. Buying as a first-time owner is honest about perishable hours someone will underwrite.

State minimum wage is a model input for the hours you will hire. This page does not invent a wage table. Union contracts and WARN clocks show up on larger headcount files — handling employees, union contracts, and WARN if that is the file.

USDA FNS: SNAP authorization does not transfer. If EBT is a real aisle, the next owner’s first weeks can be a thinner living while the new application is pending. Budget downtime in cash. Do not treat last year’s EBT week as guaranteed take-home. EBT / SNAP diligence is the calendar.

Alcohol mix can be part of the living where the privilege exists. NABCA lists 17 control states plus local-control pockets. Do not count a spirits living the next owner cannot hold.

What the next owner can actually take home

Worth and living are different questions. How much a grocery store is worth is recast SDE times a negotiated multiple, plus inventory at cost. BizBuySell’s 3.38 average earnings multiple in 2025, 2.66 five-year average, and 1.60–3.15 IQR tell you what sold files printed. They do not tell you what you take home on Tuesday. A 0.43 revenue multiple hides the rent that ate the living.

DSCR is the living after the note. A store can be a good household and a terrible loan if the payment eats SDE. What DSCR is is the coverage test. The cash-to-close estimator reminds a buyer that inventory cash and working capital are not take-home. They are cash you write at close.

A seller who has been living on the store — groceries, fuel, a personal auto, a related-party rent — will feel poorer on paper than they felt on Saturday. That is not a valuation attack. That is the recast showing the household. A buyer who wants that same household must work those hours or hire them. There is no citeable national “grocery owner salary” that replaces that math.

Lottery commission, if the contract is personal, is not a durable living. Confirm before you count it. Tobacco sits with tax and health agencies. WIC is a vendor file. Mix that walks when a permit walks is not take-home you can promise a spouse. WIC, lottery, and tobacco checklists belong in the living conversation as clocks.

The buyer hub and the seller hub both start from the same recast. When the worksheet shows a living you can say out loud — hours included — book a confidential intro. Bring the P&L, the schedule, and the lease. Grocery Store Business Broker will separate household cash from a W-2 slogan.

An illustrative recast on How much does a grocery store owner make?

Use this napkin recast on How much does a grocery store owner make? when you book the call. It is labeled illustrative. BizBuySell's 2025 grocery sold-business earnings multiple averaged 3.38, with a 2021-2025 IQR of 1.60-3.15.

Input or output Illustrative figure
Weekly sales (illustrative) $108,000
Annual sales $5,616,000
Recast SDE $230,256 (4.1% of sales)
Inventory at cost $468,000 (~12 turns)
Occupancy check $134,784 / year (2.4% of sales)
Low going-concern $893,974 at 1.85x SDE + inventory
High going-concern $1,124,230 at 2.85x SDE + inventory
Sketch DSCR on a note 1.43

Rent at 2.4% of sales is the occupancy check. If the real lease is higher, the SDE in this table is too generous until you recast to market rent.

Frequently asked questions about How much does a grocery store owner make?

Is the owner’s W-2 what they make?

Usually not. Many owners take the living as a low W-2 plus draws, rent, and personal expenses. Recast SDE is the living. The W-2 is one input.

Does FMI publish an owner-salary figure?

FMI publishes a 2.1 percent average net profit for food retailers in 2025. That is a net sample, not an owner W-2 and not your SDE.

If I hire a manager, do I still keep SDE?

No. SDE assumes one owner-operator. Subtract a market wage for the hours you will not work. What remains is closer to a hired-operator living.

Does a bigger sales week always mean a bigger living?

No. Occupancy and labor can eat a busy week. FMI channel weekly sales are not your take-home. Recast the P&L.
